Roast duck

Ingredients Quantity
Duck 1 piece
Apple 1 piece
Onion 0.170 kg
Thyme twigs 3 pieces
Salt and pepper  
Saltwater to pour over the duck  

Preparation:

  • Free the duck from feather residues, remove giblets
  • Season on the outside and inside
  • Peel the apples, remove the core and cut them in cubes
  • Peel the onions, cut them in cubes mix them with the apples and the thyme and fill the duck with the mixture
  • Bind the duck and cook for 1hr 20min on 175°C
  • Constantly douse with saltwater
