Pumpkin soup

Ingredients Quantity
Pumpkin from the glass 0.300 kg
Onions 1 piece
White wine 0.1 ltr
beef broth 0.8 ltr
cream 0.1 kg
Butter 0.040 kg
Salt and pepper  

Preparation:

  • Cut the pumpkin in cubes and sweat it in butter together with the onions cut in cubes
  • Extinguish with white wine
  • Fill up with the beef stock and cook for 15 minutesn
  • Mix well in a blender
  • Add the cream, salt and pepper
