Red wine ice cream
| Ingredients | Quantity |
| Red wine | 600 ml |
| Sugar | 0.175 kg |
| Vanilla pod | 1 piece |
| Butter, cold | 0.250 kg |
| Egg yolk | 5 pieces |
| Gelatine | 8 pieces |
Preperation:
- Reduce 400 ml red wine to about 200 ml
- Cook the rest of the red wine with sugar and the core of the vanilla
- Cut the cold butter in cubes and mix with the boiling red wine
- Put the cauldron into a water bath, add the reduced red wine and mix the egg yolks in while constantly beating the mixture
- Heat the water bath up to 80°C
- Desolve the gelatine and put in
the mixture - Pass the egg mixture through a sieve and let it freeze
in an ice maker when cooled down
