Red wine ice cream

Ingredients Quantity
Red wine 600 ml
Sugar 0.175 kg
Vanilla pod 1 piece
Butter, cold 0.250 kg
Egg yolk 5 pieces
Gelatine 8 pieces

Preperation:

  • Reduce 400 ml red wine to about 200 ml
  • Cook the rest of the red wine with sugar and the core of the vanilla
  • Cut the cold butter in cubes and mix with the boiling red wine
  • Put the cauldron into a water bath, add the reduced red wine and mix the egg yolks in while constantly beating the mixture
  • Heat the water bath up to 80°C
  • Desolve the gelatine and put in
    the mixture
  • Pass the egg mixture through a sieve and let it freeze
    in an ice maker when cooled down
